Ceremonial cacao starts and ends with one ingredient: whole cacao beans. They’re shelled and ground into liquid chocolate, conched, and then cooled into discs or bricks. No sugar, no emulsifiers, no cacao butter added back in, no wax, no artificial flavor.
As the cacao beans are ground, the cacao butter naturally present inside every bean is released, transforming the beans into smooth 100% cacao. Nothing is extracted, as it is when making cacao powder, and nothing unnecessary is added. Every batch is then conched, tempered, and poured into ceremonial cacao discs.
The natural fats, fiber, minerals, and polyphenols remain intact rather than being separated into individual components. In nutrition science, this is often described as the food matrix: how nutrients behave when they exist together within a whole food rather than being isolated into supplements or extracts.

What Happens When Cacao Butter Stays Intact

Cacao butter is the fat that lives naturally inside every cacao bean. When you grind down a whole cacao bean, it turns into liquid chocolate, not powder, because of the cacao butter content. With ceremonial cacao, that liquid chocolate is then cooled into the discs you receive.
To make cacao powder, most of this natural fat is pressed out before the remaining cacao solids are milled into a fine powder. While cacao powder is useful for baking and smoothies, the finished product no longer contains the same amount of cacao butter naturally present in the whole bean.
Many plant compounds are fat-soluble, meaning they are more effectively absorbed when they are consumed alongside healthy fats. When cacao is prepared as a drink, its natural fats disperse through the liquid and create a creamy emulsion that carries the compounds present in the cacao. This helps the body absorb all of the beneficial nutrients present in cacao.
