Cinco de Mayo, often mistaken for Mexican Independence Day, actually commemorates a Mexican victory over the French army in 1862 and has become a celebration of Mexican culture and heritage. Though cacao originated in the upper Amazon, it traveled through extensive trade networks into Mexico where it has been cultivated since around 1900 BCE by a pre-Olmec culture and became deeply rooted in traditional Mesoamerican life.
We are especially grateful to the Zapotec elder María from Oaxaca who originally taught Jonas how to prepare cacao from local beans, and our Oaxacan Spice recipe is an homage to her teachings.
