Quality Comes From Regenerative Agroforestry

One of the biggest misconceptions is that organic certification alone determines quality. While organic certification is extremely important to keep cacao farms and farming communities safe from harmful chemicals and to ensure the cacao is not fumigated with toxic chemicals when it enters the country, regenerative cacao farming goes much further. The farmers we partner with consider the entire rainforest ecosystem, working to improve soil health, increase biodiversity, steward watersheds, and protect the delicate relationships that allow cacao to thrive. These regenerative practices have a big impact on the quality of the cacao beans.

Cacao may be the primary crop on these farms, but it is rarely the only one. Many of the farming families we work with intercrop cacao with banana, plantain, avocado, coconut, corn, coffee, ginger, cardamom, hardwood shade trees and more. In some regions, cacao farms serve as important buffer zones that help preserve untouched and secondary-growth rainforests.

Quality begins with this relationship to the land. The health of the soil supported by chop and drop pruning, the managing of cacao pod disease by pruning for optimal airflow and sunlight, and all of the other species cacao grows alongside influences the flavor, composition, and quality of the cacao bean. 

 

Crafted With Intention

Not all ceremonial cacao is crafted the same way. A lot of companies have jumped on the bandwagon and call their cacao ceremonial as a marketing tool but the methods used to transform beans into ceremonial cacao can vary dramatically from one brand to another. Those decisions influence flavor, texture, consistency, and ultimately the experience of drinking it.

At Ora, ceremonial cacao begins with a single ingredient: whole cacao beans. Nothing is added and nothing is removed. The naturally occurring cacao butter remains intact and low temperature roasting preserves the minerals, flavanols, and other beneficial compounds found within the whole bean.

Our approach was inspired by traditional open-fire roasted cacao-making practices shared with Jonas by a Zapotec elder in Oaxaca, Mexico. After returning home, he became curious why even high-end chocolate available in the United States seemed to be missing the aliveness he experienced from cacao in Oaxaca. 

That curiosity ultimately led to designing and building Ora’s own factory and manufacturing process around preserving the integrity of the bean while scaling traditional methods with precision and care.
